Lebanese cuisine may be slightly lesser-known in the UK than other international cuisines, but its’ popularity is certainly growing fast as budding gastronomes seek to expand their taste horizons. The cuisine is characterised by fresh and extremely nutritious wholefoods prepared to perfection – with vegetables, whole grains, fruits, seafood and fresh fish featuring highly in traditional recipes. Poultry is more commonly used than red meat in dishes, and red meat used in Lebanese cooking is typically lamb or goat meat. Garlic and olive oil are also heavily used, along with lemon juice and pulses. Dishes to try include kibbeh (the national dish of Lebanon – spicy meat and nut balls which are deep-fried), hummus, rice pilaf and fattoush salad. Look out for sweet knafeh pastries for dessert too, which combine cheese, honey and nuts to an incredibly indulgent effect!
