Or Lasan’s winner for Gordon Ramsay, the elaichi beef, in which Hereford beef, reared naturally on Stokemarsh Farm, is marinated and braised overnight, accompanied by bone marrow pakora and tandoori-baked sweetbreads plus a black cardamom-scented cashew nut gravy.
