The towns and districts within the Lake District are renowned for a number of dishes that originated in the area. The Cumberland Sausage, for example, defined by its distinctive, coiled shape and wholesome flavour is served in restaurants and cafes well beyond the boundaries of Kendal. Cumberland ham, as the name suggests, also originated in the area and is distinguished by its savoury and also sweet flavour, due to the process of first salting the ham which is later rubbed with brown sugar before curing. Another regional dish is Cumberland tattie pot, which consists of minced beef, onions, tomatoes, a selection of herbs, swede and black pudding. Cumberland tattie pot is served with red cabbage as a side dish and is a firm favourite with the natives. Additionally, the restaurants in Kendal frequently use locally sourced meat, fish and vegetables.
