Pasande is one such dish, in which lamb fillets are slow-cooked in an onion sauce, conferring a melt-in-the-mouth tenderness to the meat. Another, lamb nihari, consists of lamb shank on the bone served in a metal dish, while shahi paneer labadar is a special dish of cubed Indian cheese cooked in a creamy onion sauce.
