Cardiff is synonymous with coal and it was here that coal owners and ship owners would meet to buy, sell and exchange. Back in the day, Cardiff was an enormous exporter of coal and the people of the city were very proud of this fact – nowhere is this more evident today than here at Mount Stuart Square and the beautiful Exchange Hotel. Culley’s restaurant and bar, as well as savouring the beauty of the building itself and what went on here, aims to keep the same local Cardiff spirit alive by offering a menu that Cardiff diners can be proud of.

As we mentioned earlier, the menu is British and wonderfully Welsh in terms of style and flavour, and everywhere you’ll find locally-sourced ingredients that change according to season. Culley’s is open for all meals of the day, but to give you a taste of the evening a la carte, starters range from confit duck leg with green apple croquette to Cardiff dry gin and passionfruit cured salmon with pickled cucumber and blue swimmer crab. For your main, consider pan seared sea bass, roasted squash and spring vegetable Wellington or, our favourite, the pan-roasted lamb rump with buttered kale and wild mushroom, sweet potato shepherd's pie, a confit lamb bon bon and a veal and port sauce. As you can see, these are refined British dishes and without doubt some of the best you will find in Cardiff Bay or anywhere across the city. We urge you to try it.
