It’s wise to opt for Ametsa’s tasting menu if you’re uninitiated into the pleasures of Basque cooking. This way you can explore an incredibly curated selection of dishes that are in equal parts beautiful and delicious. The first forkful feels blasphemous, like you’ve desecrated a sculpture, but from then on it’s a heady journey through the earthy, seasonal flavours of Spanish Basque cuisine given a bold, contemporary spin. Amazing food. Exceptional service. We went for the tasting menu, my fiancé had the pairing wines too great portion size and knowledge on each. It was my fiancé birthday and they surprised him with a dish at the end.
