Marie Gonfond is the talent and name behind Merci Marie and places a huge emphasis on the quality of all of her ingredients, ensuring that she only uses free-range meat, organic eggs and sustainable fish. Merci Marie is a unique, relaxed restaurant and café tucked away in Fitzroy House; an old warehouse now used by local creative businesses in Dalston. A Provence-born chef, Marie hails from generations of farmers and fantastic cooks. She grew up in an environment where the focus was firmly placed on the taste, quality and love put into each meal. Marie has brought these values over to London with her, mixing up traditional Provençal cooking, with inspiration also drawn from the diversity of London, and she set up Merci Marie in February 2013. Her produce is always sourced locally in Dalston, with Marie bestowing praise on the Turkish community, whose vegetables she particularly enjoys using, along with the freshest ingredients; both free-range and organic. This makes for an evolving menu of seasonal fare and experimental cooking, always served with a smile.
