Absolutely amazing food! This definitely challenges the best tapas restaurants in Brighton! Great service! I would highly recommend!
Brilliant restaurant! This was my first visit. Strongly recommend booking as this place isn't big and it gets busy. Prompt service, fantastic range of Spanish wines, fantastic food and very friendly staff. Heads up - there are no menus given out. The menus are on the wall, or you can ask the staff. If you are a group of more than two, you get a table, and if two or less, you sit at the bar. Absolutely recommend if you want a quick dinner before going on somewhere else or you want to hang out with friends for an hour or two. There is something for everybody on the menu!

Very attractive dinning room and cheerful, very efficient service. Excellent but pricey wine list and any queries about a particular wine were met with the offer of a taste - we selected a very pleasant white organic at £28, although this appeared as £30 on our bill. Our 7 dishes were well flavoured and beautifully presented. They included a crisp calamari dish with a gentle ink sauce and a perfectly seared cod steak with a robust ‘bisque’ style sauce. Our only criticism would be that the ‘local’ bread was four thin half slices of regular toasted bread and two half slices of untoasted - hesitate to say fresh. It was redeemed by an excellent tapenade and quality olive oil - not sure it warrants the £4:00 tag. The other disappointment was the lack of actual chicken meat in the delicious Pollo al ajillo - it is probably difficult for the kitchen to know if the chicken pieces are mostly bone and skin - in our case we were bone heavy and meat lite. At £30 a head, we felt we had enjoyed a stylish, tasty, if expensive, lunchtime snack.
If booking, - my only complaint would be to ask not to sit near the door - as it doesn't shut properly and people kept coming in and out and because it didn't shut properly - we had to keep getting up and down to shut the door which was very annoying.

Really imaginative tapas but unfortunately four items were not available
The tables were just oiled and ruined my wife's jacket entirely. The sleeves of her nice blazer were black. We complained, the manager sat at a table the entire evening and did not bother to come to us to see what was happening. The poor waitress kept going back and forth to the manager's table, discussing all the time. After a long time they said they would offer the food. As we were flying home the next morning we insisted to get the money for a new jacked. They said sorry but no way would they do that. We were very upset to still see the manager sitting at the table laughing. We left and on the way out he was still laughing at us, we were literally pushed out of the door. Our guesthouse recommended we would eat here We will certainly let them know. Very, very disappointing attitude.
Unfortunately compared with other times I have been here, potions were a lot smaller. Goats cheese was not there but harder cheese instead and the ribs were a little chewy. We will give the restaurant another go as we have had great meals there before.
We really enjoyed our evening meal here and would recommend.
The food we had was lovely, but had run out of olives, balsamic vinegar, butter, scallops and padron peppers so menu rather restricted for tapas, oh and the white rijoca had also run out. It was rather embarrassing, as the first time I went it was fantastic and Saturday was a bit of a let down in front of friends that I had raved to about the place 😢
After our table was moved away from the toilets we had a lovely time. Delicious food, great atmosphere.
Ribs and croquetas were to die for, bit expensive though. Did have to send dish back but they did deal with it very well.
Overpriced for uninspired tapas would not recommend a bit disappointed
Food was good but portions are on the small side compared to other tapas places in town. Avoid sitting near the door as it’s hard to close - a succession of people left it open last night, subjecting us to chilly blasts of air. I had to get up to close it half a dozen times.
I’ve been previously in this restaurant and had a great experience! Unfortunately this time I could not say the same, as some dishes that we’ve ordered where under cooked which made the whole experience not as pleasing! Nevertheless they were kind enough not to charge us for two dishes that were not in conditions to be served.
Amazing food, service and atmosphere, the tables are bit too close to each other and you could fix that door but it won't put me off, I'll be back soon :)

Great food would thoroughly recommend a visit, as it is, by a long shot, the best Spanish food in town.
Excellent all round, only negative was that we couldn't leave a full tip as it was 'cash only tips' ... Would have tipped more if we were able to!

Great potential but the chefs need to taste their own food as some plates were really under seasoned and others were desperately in need of some acidity to balance the flavour.

Unexpected menu with flavours of oriental influences. Load of coriander which I can't stand. Staff is very helpful and attentive though. Based on food I had I wouldn't go back. Unless paella is added to the menu?

The restaurant was superb! The food was a complete adventure for the senses!! The calamares and beef shins were my favourite!! Staff were friendly and attentive, the chef's introductions of each dish was a lovely personal touch! I had a thoroughly enjoyable evening and will definitely be back soon, thank you Pabellon 👍😊x

Delicious food, lovely chefs who explained our dishes and were very friendly, rest of staff were wonderful too, can't wait to go back and try everything we couldn't fit in :)
