The Filling Station Smokehouse’s house smoker was a trophy hard won after the owners of the popular American burger and BBQ restaurant family endured months of research and development (eating and eating, and taking notes). Now the smoky reactor is installed at the restaurant’s Doncaster town centre BBQ HQ, and into it go ribs, pork, brisket, chicken wings and a whole lot more, marinated in the restaurant’s own marinades and taking time out to think about what they’ve done over hickory wood chips, coming out pitch perfect and ready for the sauce.
It’s a slow process, but don’t worry – this Doncaster American barbecue master does the hard work behind the scenes – great food, not fast food. The results are piled into many items of The Filling Station Smokehouse’s menu, especially the From The Smoker section. Go for the smoked sharing platter – brisket, pork, smoked Chicago bulldog sausage, chicken thighs, half a rack of ribs with fries, onion rings, corn and beans or – with 24 hours advance notice (leave a note when you reserve) and not a little ambition – you can dig into The Flintstone, a massive, tenderly smoked cut from a spare rib.
