29 may fall a little short of the 50 states that America can boast, but given that India is some three times the size of the US of A, we think they’ll get away with it. Any attempt to recreate the diversity and depth of a cuisine shared across a billion people is a daunting task, but Jaswant Mehra, a native of Gwalior in the dead centre of the country, some 200 miles south of New Delhi, is taking on the challenge with no little success. The menu he has created on Tower Street in the centre of York takes in the four corners of the country: Rajanstani seabass, Punjabi chicken tikka, Lucknowi lamb and Goan tandoori prawns are just a few of the dishes on offer at 29 States. They’ll even cook you a British-style balti or korma as well, so you really have no excuse not to be setting your sails for the city centre of York and reserving a table at this restaurant on Tower Street.
