Guildford is a long way from Bangkok, but thanks to Mrs Wannut, her husband and their extended family, they’re taking the tastes of Thailand and bringing them to the town centre. She was born some 40 minutes from the Thai capital and her upbringing informs the menu at Sir & Madam: the cuisine of the Bangkok region is front and centre, meaning curries and fresh seafood, and somewhat less spicy than the reputation of Thailand might suggest. When you arrive at Sir & Madam on Jeffries Passage, close to Guildford Castle, you’re going to have to bring your biggest appetite with you. Start off with a mixed platter split between two – sesame prawn toast, spring rolls, satay chicken breast skewers and roast spare ribs – and then choose your curry (red, green or yellow, plus Panang or Massaman); a stir-fry of pork, chicken, beef, prawn or fish or a vegetarian-friendly option.
