Just as well, for Swadesh (and its cousins the Sangam family of restaurants) have built a reputation for providing an exceedingly fine Indian dining experience. The chefs at this semi-rural Trafford Indian restaurant have been recruited from top-flight establishments from around the world, and have happily created a list of Indian and South Asian delicacies that showcase the depth and complexity of these regions’ vast cuisines. You can’t go wrong when you take a table at Swadesh’s Richmond Road premises with a mixed platter to start, shared between two. The Tandoori Khazana features Hyderabadi seekh kebab, lamb puht, mahi salmon, makhmali tikka with mint chutney, while the vegetarian option is just as opulent and carefully curated: paneer achari tikka, tandoori khuley, subz pakora, and tandoori gobi.

More regular dishes from this masterful cook include the grilled tandoori murg amritsari, with baby chicken marinated in a mild yoghurt, authentic Indian paneer cheese and cream sauce, with green cardamom, mace, coriander, the whole cooked in the clay oven.
